Yirgacheffe

Yirgacheffe is not really a place so much as a promise. The name sits on a small town in the Gedeo Zone, but it has come to mean a particular kind of clarity in the cup, a clarity that is floral, tea-like, almost translucent, that buyers spend careers chasing.

The forest here is old and layered. Coffee grows beneath shade trees on smallholdings measured in fractions of a hectare, and the altitude does the rest: cherries ripen slowly, sugars concentrate, acidity stays bright rather than sharp.

Almost everything is washed, and washed carefully. The stations here are meticulous about float sorting and fermentation timing, because at this altitude the difference between good and extraordinary is measured in hours.
